Lamb is 2nd in my meat league. Can't beat a proper steak!

Duck is probably 3rd.

We don't have Turkey at Christmas, we have Goose (with a beef joint too) but I don't really like Chicken/Turkey/Goose etc.

Red meat for the win.

Lamb, then Beef. Love Duck too-don't eat if very often though.

Isn't Goose fatty? Never tried it.

Make sure you get hold of Canadian Geese and the meat is quite dark but yes quite fatty too. BUT, drain off the fat and use it for the roasties and jobs a good one.

It's the big bill that's hard to swallow tease

Turkey is a dry meat, it'll always be dry. I presume what you mean is you've never served up a drier than normal Turkey tease

First off, always cook it upside down.
Does not 'look right' but it helps alot.

Streaky bacon, under the skin (bleugh-not my job, thankfully) It does the job when the Turkey, is turned upright, for the last half hour, with the Tin Foil removed.

Regular basting.
