The Commodore's Cellars (including one of its old regulars in 3rd and last pictures).

These cellars are actually the extended cellars which go under the pavements and roads.

is this similar to the hole in Jackson st - no building above

In the 6th pic what do you think the round opening was

The round hole is almost certainly a coal hole. It was TC's mention of Jackson Street cellar that reminded me that I had this place on my list of to-be-looked-at.
