Try using a torx socket. The smallest you can hammer on. Worked for me in the past. tried it, no good

Weld a nut on to it then turn that!

Have you git a dremel with a flexible head. Grind the head of the bolt off then when the thermostat housing is off turn the rest of the bolt out with grips or stilsons.

I will repeat this again, I can get nothing near the head of the bolt, no dremel, no hammer, no mole grips, no nothing.

What is the car? Have you looked underneath, it's usually better access under there.
